According to the archival sources, there had been plans since 1696 to build a water mill on the upper reaches of the Sorge, which under the name Stente forms the only outflow from the Bistensee and carried sufficient water for year-round mill operation. The instruction for the construction took place in 1697, the execution was entrusted to the miller Jürgen Böhl. Construction supervision was carried out by the miller Jürgen Boehl, who also became the first tenant. The mill and house were to be built economically under one roof, with the stable and bakery not far away. The mill received two water wheels with one grinding each.
In 1700 the plant was completed and Stenten became a compulsory royal Danish mill. In 1738 the concession was extended to the production of groats and pearl barley. The main building of the mill will have been expanded for the first time around 1796, and again around 1824. The through traffic on the old road connection from Rendsburg to Schleswig made it possible to set up an extensive inn, which was also frequented by many day-trippers because of its charming location. Another line of business at Stenten-Mühle was an intensive fish farm. 1854 Sale of the mill to the hereditary tenant Catharina Bahr. The sale of the mill had to be reversed because the mill was no longer compulsory. Carstens became the new tenant. From 1860 to 1896 August Weinholdt acquired the property as the new owner.
