One striking example is the violet chanterelle (midnight mushroom).

Hiking

The violet chanterelle looks like it came from an enchanted forest: its surreal midnight blue color and velvety soft. It's also quite rare. While it's edible, it tastes more like forest floor. Better to look at it than cook it!
