If your staying in Prince Albert and want to go mountain biking or a scenic drive the Swartberg Pass is the place to go. I cycled through but you can easily cycle there and back in one day. There are many others doing the same.

You definitely have to visit the labyrinth at My Shire Farm. Lisa the owner is a wonderful person and puts a lot of work into it so please leave a donation. I stayed here for 2 weeks and it was the greatest experience.
