Viticulture in the Noble Valley covers approximately 500 hectares of vineyards, spread mainly across the communes of Soultzmatt and Westhalten. In each of these two communes, a wine trail allows visitors to discover the grape varieties, the characteristics of the wines, and the different stages of vine cultivation and winemaking. During the summer season, winegrowers organize guided tours, cellar visits, and tastings. More than thirty winegrowers, as well as a winery between Soultzmatt and Westhalten, offer this tourist and gastronomic experience. All Alsace grape varieties are grown in the Noble Valley: Sylvaner, Pinot Blanc, Riesling, Pinot Gris, Gewurtztraminer, Pinot Noir, Muscat, and Crémant. The Noble Valley is also home to two Grand Cru sites, namely the "Vorburg" and the "Zinnkoepflé," the highest-ranked Grand Cru vineyard. Its shelly limestone, combined with extremely low rainfall, produces wines with a rich bouquet, spice, and fire, especially Gewurtztraminer. Pleasant in their youth, the Zinnkoepflé Grands Crus surprise with their extraordinary aptitude for maturation and thus naturally rank at the top of the select family of great wines for aging and gastronomy.

Sarcophagi from the Merovingian period were discovered near the church, as well as a burial ground from that period in the vineyards of Petit Pfaffenheim. It was first mentioned in 1186 as Pfaphinheim. The place name Petit-Pfaffenheim in the vineyards east of the village recalls the abandoned small settlement of Klein Pfaffenheim. No traces remain of the castles of Presteneck, Hertenfels, and Meyenheim known from the documents; at Laubeck, only the remains of a round tower and the moat remain. A leper hospital is mentioned in 1578.

This tower is the last remaining of the city's fortifications; it is currently topped with the traditional stork's nest. The Witches' Tower served as a prison for centuries and owes its name to the women accused of being witches who were allegedly imprisoned there. Its round base, dating from the 13th century, is the oldest part; the square floors date from the 14th and 15th centuries. The building has been listed as a historic monument since 1921.

Absolutely stunning and charming historical village! The buildings are not only beautiful, but also so well preserved. It was very quiet when I was there - probably just because it was a Sunday. Nevertheless, it didn't seem as "full" as some as the other villages along the route. That's a great thing for sightseeing, but maybe not so great if you're looking for food or supplies.

The Langenstein menhir (a 4-meter-high long stone) was erected in 1904 by a Soultzmatt industrialist, who recognized this block as an overturned menhir. Legend tells that on full moon nights, fairies, or White Ladies, come to dance around the Langenstein. During this ceremony, the stone is said to begin spinning!
